Many of them explain the math behind the pop up giving you insight as to how you can vary a mechanism. This book has many black-and-white line drawings illustrating all the popups. His newer book (Pop-Up Design and Paper Mechanics:

A manual which explains how paper mechanics work and provides instructions for creating everything from the most elementary pop-up card to highly sophisticated fold-away paper sculptures. The basic principles are simple and the book introduces these. It then shows how they can be developed and combined to produce a kaleidoscope of 3D possibilities.
